The winery is located in the municipality of Caorle, province of Venice, on the outskirts of Valle Zignago, within the Lison-Pramaggiore wine region. The land is of alluvial origin with a medium texture, rich in limestone clays and natural aggregations of calcium carbonate. This geological heritage gives elegance and unmistakable aromas to our wines.


Wine is generated in the vineyard. Believing in this fundamental premise, since 2000 we replanted the vineyard, introducing vines of Lison, Glera, Chardonnay, Merlot, Cabernet Sauvignon, and Refosco dal Peduncolo Rosso. We chose a low planting density which provides a low yield per plant, a fundamental requirement to ensure superior quality.
Believing that the typicity is an added value, during the processing phases, both in the vineyard and the winery, we limit any intervention that might alter the inherent characteristics of our wines. Each vintage thus tells a different story, while remaining an authentic expression of our territory.
The winery has been obtained from the recovery and renovation of an old disused barn. The distinct areas for vinification, maturation and storage, have been created to optimize the whole production, while maintaining the original structure as much as possible . The addition of a new reception area, largely glass-walled, makes the tasting which follows the visit to the production area particularly enjoyable.
The Fermentation is managed in temperature-controlled steel tanks, lasting from 7 to 20 days depending on the wine type. The malolactic fermentation, which gives softness and roundness to the wine, occurs spontaneously, usually at the end of alcoholic fermentation or with the arrival of springtime. The wine is then aged in steel or transferred to oak barrels for maturation.


The “La Frassina” winery is located in the center of an area of 500, originally marshy, hectares. The reclamation of this portion of the Caorle lagoon Caorle was initiated in 1940 by our grandfather, engineer Mario Pasti, and completed by our father, engineer Francesco Pasti. The intervention involved excavating channels for water collection, installing pumping stations, constructing new embankments and reinforcing existing ones. Natural protection zones were preserved, and nowadays they still provide refuge for fish and native birds. The farm is dedicated to arable crops, while 12 hectares are reserved for the vineyard, which is continuously evolving.
A few kilometres from the sea, the farm is surrounded by a rich and varied landscape: the Lemene River, the Nicesolo Canal (known as Canalon), the Valle Zignago with its mixed activities of agriculture, fishing and hunting, the Franchetti Valley and the wildlife reserve.
In 1948, Ernest Hemingway lived between Venice and the lagoon of Caorle. He went hunting here and drew inspiration for the novel “Across the River and Into the Trees” which tells the story of Colonel Cantwell, torn between the emotions of war and his passion for hunting, wine, and women.

After graduating in Biology and obtaining a Ph.D. in Neuroscience at the University of Padua (1997), Lucia completely changed fields and decided to dedicate herself, along with her brother Carlo, to producing original wines by founding the “La Frassina” winery. Lucia’s scientific training translates into a precise and conscious working method, both in the vineyard and in the winemaking processes. From the very beginning, her main goal has been to produce wines that are a full expression of the territory from which they originate. Along with her nephew Filippo, Lucia is also responsible for welcoming guests at the winery.

Carlo Pasti, a graduate in Agriculture from the University of Padua (1992), manages the viticulture of the “La Frassina” winery alongside his sister Lucia. Carlo’s agronomic training allows him to make crucial decisions regarding grape varieties and vineyard management practices, ensuring the quality necessary for wine production. In addition to viticulture, Carlo oversees the rest of the company, following the cultivation of sugar beets, corn, soybeans, and wheat.

Filippo, the second generation of winemakers, has joined the La Frassina team in 2022. After earning a degree in Management Engineering and gaining experience in various companies, Filippo has brought fresh ideas and innovative approaches to the business. Curious and always attentive to customer needs, he actively collaborates in defining business strategies and optimizing organizational processes. His commitment, which also includes welcoming guests, tastings, and guided tours of the winery, aims to promote the sustainable growth of La Frassina and offer an unforgettable experience to all who visit the company.
